Zesty Lemon Cake Recipe 🍋

Brighten up your afternoon with this light, zesty lemon cake, perfect for sharing with friends over tea (or keeping all to yourself, we won’t judge)
Ingredients:

200g unsalted butter, softened
 - 
200g caster sugar
 - 
4 large eggs
 - 
200g self-raising flour
 - 
Zest of 2 lemons
 - 
3 tbsp fresh lemon juice (use your lemon juicer!)
 - 
2 tbsp milk
 - 
Icing sugar, to dust
 
Method:

Preheat your oven to 180°C / 160°C fan / Gas 4 and line a loaf tin with baking parchment.
 - 
Beat the butter and sugar together until pale and fluffy — think cloud-soft.
 - 
Add the eggs, one at a time, beating well after each.
 - 
Fold in the flour and lemon zest, then gently stir in the lemon juice and milk.
 - 
Pour the batter into the tin and smooth the top. Bake for 35–40 minutes, or until a skewer comes out clean.
 - 
Let it cool slightly, then dust with icing sugar and serve on your favourite Caroline Gardner plates!
