Zesty Lemon Cake Recipe 🍋

Brighten up your afternoon with this light, zesty lemon cake, perfect for sharing with friends over tea (or keeping all to yourself, we won’t judge)

Ingredients:

  • 200g unsalted butter, softened

  • 200g caster sugar

  • 4 large eggs

  • 200g self-raising flour

  • Zest of 2 lemons

  • 3 tbsp fresh lemon juice (use your lemon juicer!)

  • 2 tbsp milk

  • Icing sugar, to dust

Method:

  1. Preheat your oven to 180°C / 160°C fan / Gas 4 and line a loaf tin with baking parchment.

  2. Beat the butter and sugar together until pale and fluffy — think cloud-soft.

  3. Add the eggs, one at a time, beating well after each.

  4. Fold in the flour and lemon zest, then gently stir in the lemon juice and milk.

  5. Pour the batter into the tin and smooth the top. Bake for 35–40 minutes, or until a skewer comes out clean.

  6. Let it cool slightly, then dust with icing sugar and serve on your favourite Caroline Gardner plates!
